What a great question! Cold brewing uses time instead of temperature to gently extract the flavor and benefits of raw cacao, while leaving behind its harsh bitterness.
Similar to cold brew coffee, we soak our cacao beans in room temperature water overnight and filter out the delicious dark chocolatey goodness in the morning. Not only does cold brewing cacao cut the bitterness, but it also allows its subtle notes to shine!
